Golden Raspberry Almond Tartlets

macarons again! At the risk of sounding monotonous, but it was a bit 'not me and I made them with all these books of French pastries at home I could not resist.
The excuse was to test the heart shape I've seen on the book by Felder and the association with the filling of my beloved raspberry was a must!
A little pampering sweet and romantic to offer your soul mate!
The recipe comes from the filling Christophe Felder's book "Les meilleurs macarons, but also on the big book of which I spoke there are several spectacular recipes.

ingredients :
200 g blanched almonds,
200 g of sugar, 150 g egg whites
(a few days old),
200 g of sugar,
50 g of water,
red food coloring.

Finely chop the almonds (toasted for 10 minutes at 150 ° C and cold), add the sugar and sift together (not too fine sieve).
Combine 75 g egg whites with a silicone spatula.
The dye can be added to the meringue. Mount
75 g egg whites with electric mixer. Meanwhile cook 200 grams of sugar with 50 g of water up to 118 ° C. Lower the speed of the electric whisk and pour in on the egg whites, continue beating (watch out for splashing hot, do not pour directly onto beaters!). Reach a temperature of about 40 ° C.
Then you obtain a swollen, shiny and white (if you did not add the dye ...). Embed
above mixture to time with a silicone spatula or a pastry. It says "macaronner" (there are also videos on the net!), When the mixture falls from the spatula like a big band then that's fine.
Put everything in the pastry bag with a plain nozzle of 8-10 mm in diameter.
Coat the baking sheets with baking paper and shape of the piles as regular as possible. Beat lightly with his hand on the bottom of the plates, always keeping them horizontal to break any air bubbles. Let stand
(forms a crust), from 20 minutes to several hours, but I think only a few minutes.
Bake at 150 ° C for 15-20 minutes depending on the size of macarons (electric oven).
Someone recommended to place three identical pans while cooking.
Felder advises the gas hob but I think the macarons too darken and dry out, check the temperatures well with your oven.

raspberry filling :

2 eggs,
100 g of sugar, 10 g of cornstarch
,
210 g frozen raspberries,
1 sheet of gelatin,
140 g of butter.

Soak gelatin in cold water. In a saucepan combine the eggs with the sugar and cornstarch and add the raspberries and cook, stirring constantly until the first boil. Remove from heat and add the drained gelatine and butter, mix well and sieve. Pour onto a plate, cover with plastic wrap and let cool a couple of hours in the refrigerator.
Fill a pastry bag and fill the macarons.

mmmmmmmmmmmmmmmm! delicieux ...

Making A Guy For Guy Fawkes

Families, emergency rent

Still on the diocesan fund overtime for families affected by the crisis. Here Comn used the money for loans. I explain it in below.

( fri) There are four basic needs for which loans are disbursed from the Fund outstanding diocesan solidarity. First of all rents, then the bills. The two items account for 80 percent of loans to families in need. The remaining items are those for medical expenses and education. There is no comprehensive statistical Journal on the type of applicants. We know that it is 50 per cent of Italian families and 50 percent of foreign families. "Normally - said Adriano Dotti, Caritas volunteer - is missing the primary source of income. Or the loss of job, or laid off, or reduced time. " The problem is that, due to the suspension of almost a year, today will be considered requests for up to ten months ago. "We'll see if the issue is persistent, if resolved or worsened" says Dotti.
All because the Fund has to deal with a case, as we see above article, on its last legs. For Christmas, had moved the bishop Gianni Ambrosio. In his message of greetings to the faithful of the diocese had asked to pay attention to the needs of the special solidarity fund, close to the third Sunday of Advent (the day of collection dicoesana) had invited all the pastors to raise awareness of the various local Catholic communities.

Tips purchases, the fund anti-crisis

There are parishes that even in times of economic crisis, government cuts in front of families who lose their jobs, instead of giving good example, deliberate interventions for tens of thousands of euro. It is one thing the church roof threatening to collapse, an account are other types of improvements which until now has been done without it and frankly do not see why it can not continue to do with it at least the next two years. Until the situation improves. If anyone had doubts about how things are going and did not know how to spend the money, can read the article in the diocesan fund to assist families affected by the crisis.

The fund extraordinary solidarity of the diocese to assist families affected by the crisis reopens in late February after nearly a year suspension. He does it with a dropper. The money available are few. "We plan to exhaust the waiting list," explains Joseph Chiodaroli, director of Caritas of Piacenza-Bobbio, the entity to which the bishop Gianni Ambrosio has assigned the management of the fund and, together with the banks, the delicate phase of disbursement of loans. A hundred families who may become less after a few dozen carefully skimming. Just today, the Caritas director meets with the heads of the banks. If all goes well, will soon resume, as mentioned, towards the end of this month.
The problem of course is money. To date there are 412mila €. "To this figure we must add the 20 thousand euro, the City of Piacenza has already approved - comes to terms Chiodaroli - and the result of the collection in the parishes of solidarity Piacenza held the third Sunday of Advent. We look forward to the contribution of the administration provincial Piacenza Trespidi promised by the President. " Considering that some parishes have not been able to organize the collection last December and could still get going and, considering that the total raised will be taken off the money for the Caritas works (in 2009 were EUR 57 thousand), it is hoped to bring the word € 450 thousand to fund share. Not nearly enough enough to share. The fund anti
diocesan crisis, built in 2009 by Bishop Ambrosio, AC continued until April 2010 when it stopped for lack of funds. Since last December 31 is no longer accepting any demands from families in need. "We had to close the door - says sorry Adriano Dotti, the cashier of Caritas - and send back the new requirements. "
Until April 2010, the Fund has provided loans to 222 families in need. "From April through December - continues Dotti - has created a waiting list of over a hundred new families, including requests to Piacenza and those collected in the province, including Borgotaro which is under Parma but part of the diocese of Piacenza -Bobbio. In all, last April, the Fund has provided loans for diocesan 580mila €, having an initial guarantee fund of about € 400 thousand. The loans are almost all two-year, in the sense that after two years, families have to return the money received in aid. Well, today the banks have withdrawn over 60 practices because the beneficiaries were not able to repay the installments. This is € 180 thousand people must pay the Diocesan Fund with capital guarantee. The
412mila € said at the beginning of which are thus virtual. Must be removed to € 180 thousand of loans not repaid. The balance is € 232mila more money Municipality, Province and parishes, all promised but not yet in hand. "In this situation - Dotti knows - the risk is, however, given the difficulties of families, we decided to go on trying to exhaust the waiting list." The rest we will have to think Providence.

How Do Swim With Dolphins In Havana, Cuba

Thanks Don Lino! Don Giuseppe

For a vicar general who arrives there's another one that goes away. And 'Bishop Lino Ferrari, who leaves after seven years at the side of the first Bishop Luciano Monari, Gianni Ambrosio then. Don Lino will make the pastor of the prestigious parish of Castel San, the third of the diocese as a number of faithful. A Don Lino staff also deserve our thanks for the great help - direct and indirect - that has given us in these past years to tell the Church of Piacenza-Bobbio.

"To Don Giuseppe I said there are also some beautiful things in the role of vicar general is a service made in the heart of the diocese, the bishop at his side, to crescere la comunione, il compito del vicario è proprio questo».
On June 16, 1994 he was awarded the title of Chaplain of His Holiness with the subsequent title of Monsignor. On 30 June 1997 he was appointed "pastor in solid moderator of the parish of Our Lady of Lourdes. In 1999 he added the director of the diocesan vocations, January 23, 2004 the Bishop. Monari appointed him his vicar general, a post which will be confirmed by the new bishop, Gianni Ambrosio. On December 21, 2004 also became a canon of the cathedral of Piacenza, and October 23, 2007 is designated diocesan administrator, with the title as a guide to the episcopate of the diocese of Monari and that of Ambrosio.
